Lasagna Anyone!
One of my favorite meals to cook for my family is lasagna. It’s easy to put together and I’ve decided to share my recipe with you…so if you want to surprise your loved ones with great dinner, read on!
Things you’ll need to get started:
9”x13” glass dish
-Barilla Lasagne-oven ready, no boiling required (this stuff is great! there are other bands of oven ready lasagna but I’ve found this brand to be the best)
-Mozzarella cheese
-Parmesan cheese
-Jimmy Dean Sausage-Regular (don’t buy the flavored ones like maple, YUCK!)
-8oz can Tomato sauce (any band, I go for the ones on sale)
-14.5 oz can Diced tomatoes (again any brand…I like the one like S&W ready-cut Italian recipe, gives a little more spice to the dish)
-16 oz Low Fat Cottage Cheese
-10 oz box frozen Chopped Spinach (OPTIONAL)
- Italian Herbs
-dried onions minced
-Pam cooking spray

Preheat oven 350, bake time 40 to 45 minutes
Putting it together: (15 to 20 min)
1.)In medium frying pan brown sausage, about half way through browning sprinkle Italian herbs and onions onto meat.
2.)Once meat is browned, add can of tomato sauce and diced tomatoes, on medium heat bring to a boil, lower heat and simmer about 5 minutes.
3.)Remove frozen spinach from box and place in microwave safe dish and microwave for 3 minutes. Don’t worry if some of the spinach is still frozen, it doesn’t matter.
4.)In your 9"x 13" glass dish spray with Pam, then put first layer of lasagna noodles (3 of them)
5.)Sprinkle Parmesan cheese, then plops of cottage cheese, plops of the sauce & meat.

6.)With your hand scoop up some of the spinach squeeze out water then place plops of it on top of the sauce & meat.

To fly
I love when Josh is here, he always plays such fun games with the girls. This morning he taught them how to fly! Of course in order to fly you must have the right attire.
A cape is a must!

What a nice surprise!!!
On Tuesday Melissa, Kate, Meg, & I decided to go back to Disneyland one more time before Mel had to go back to school. It was a beautiful day, there were no crowds, no waiting in line...we just got to walk right onto every ride. The longest line we stood in was for ice cream! After taking our ice cream break towards the front of Disneyland, the girls saw Mickey Mouse and wanted to go give him a hug...they got more then they bargained for.








Then all four of them hugged it out, after Meg and Kate kissed them on the nose. What a fun experience it was, and they were sooo happy afterward. It made having to go home not so bad...both girls had big smiles on their faces. Thank you Mickey for making my 2 year olds so very happy.
Back to school
Melissa had a few extra bags to pack before going back to school!

Let's just say that she had a good Christmas!!! :)~

Saving the Galaxy!
Last night Megan spearheaded her family on a campaign to save the galaxy from the Evil Emperor Zurg!
Kate, Mel, and Meg celebrated with hugs and a job well done! So we are all safe once again...to "infinity and beyond"
